Lemon Cheesecake (Carnivore Diet Friendly)


Lemon Cheesecake

Ingredients

  • 3 Large Eggs
  • 1/2 Cup Whipping cream
  • Scoop of Ricotta
  • 1 1/2 Lemons zested
  • Juice of those Lemons
  • Vanilla
  • 1/3 Cup monk fruit and a sprinkle
  • 2 bars of cream cheese
  • 1/4 cup of butter

Pre-heat oven to 350

  1. In large blender combine all ingredients. Blend until smooth.
  2. Pour into springform pan coated in parchment paper (see photo). 
  3. (TIP! Before putting in oven, tap it onto the counter to remove air bubbles)
  4. Put in oven for 55 minutes
  5. If not browned or if it seems shaky when going to pull out, allow 5 more minutes until cooked all the way through.
NOTE: We like ours really lemony! If you do not like intense lemon, reduce the amount of zest/juice added.
